Bean and Bacon Soup
Recipe is for 1 pint jar - scale to however many you want to make.
Ingredients
- 1 cup soaked navy beans
- 2 tablespoons diced onion
- 2 tablespoons diced celery
- 2 tablespoons diced carrot
- 1 rasher bacon
- 1 tablespoon ketchup
- 1 drop liquid smoke
- x chicken broth
Instructions
- Soak beans for at least 8 hours, drain and rinse.
- Sear and crumble bacon, omit grease.
- Add all ingredients.
- Fill with broth to 1 inch of headspace.
- Debubble and adjust level.
- Clean jar rims with ethanol and tighten on lids.
- Pressure can 75 minutes for pints or 90 minutes for quarts, both with 15 pound weight.
- Remove rings and test seal when cool.
- When ready to eat, heat and serve.
