Meatballs
Recipe is for 1 pint jar - scale to however many you want to make.
Ingredients
- 1 3/4 cup lean ground beef
- 1/8 cup beaten egg
- 1/2 teaspoon mixed italian herbs
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/8 teaspoon black pepper
- 1/8 teaspoon crushed red pepper
- 1/8 teaspoon paprika
- x tomato sauce
Instructions
- Mix all ingredients.
- Form mix into balls and sear on all sides.
- Let balls cool on paper towels, then stack inside jar.
- Fill with sauce to 1 inch of headspace.
- Debubble and adjust level.
- Clean jar rims with ethanol and tighten on lids.
- Pressure can 75 minutes for pints or 90 minutes for quarts, both with 15 pound weight.
- Remove rings and test seal when cool.
- When ready to eat, heat and serve with ketchup.
