Meatloaf Patties

Recipe is for 1 pint jar - scale to however many you want to make.

Instructions

  1. Mix all ingredients.
  2. Form mix into discs and sear on both sides.
  3. Let discs cool on paper towels, then stack inside jar.
  4. Fill with juice to 1 inch of headspace.
  5. Debubble and adjust level.
  6. Clean jar rims with ethanol and tighten on lids.
  7. Pressure can 75 minutes for pints or 90 minutes for quarts, both with 15 pound weight.
  8. Remove rings and test seal when cool.
  9. When ready to eat, heat and serve with ketchup.
