White Chicken Chili
Ingredients
- 2 tablespoons butter
- 1 1/2 pounds chicken diced
- 3 tablespoons flour
- 1 white onion diced
- 1/2 bell pepper diced
- 4.5oz can green chiles diced
- 1 cloves garlic minced
- 1 tablespoons dried cumin
- 1 teaspoon dried oregano
- 1 teaspoon black pepper
- 1 teaspoon cajun seasoning
- 2 cups low sodium chicken stock
- 1 15oz can great northern beans drained
- 1 15oz can pinto beans drained
- 1/2 cup heavy cream
- 1 cup sour cream
Instructions
- Melt butter in pot on medium high
- Add chicken and almost burn it on one side then turn to low
- Stir in the flour until it coats the chicken
- Stir in onion, bell pepper, green chiles, and garlic, stir on low for 10 minutes
- Mash up most of the great northern beans, more for thicker consistency
- Add everything but the dairy ingredients and simmer covered for 30 minutes
- Add the dairy ingredients and whatever else you forgot and bring back to a simmer before serving
